Production area: Company-owned vineyards located in the southern area of the Municipality of Colonnella.
Soil: Clayey, medium texture, poor. Average altitude of vineyards: 250 metres above sea level.
Employed grapes: 100% Passerina
Consume with: Consume with important pasta dishes and white meat; it is the perfect wine for mushrooms and truffle.
Alcohol level: 11,5% Vol.
Best served at: 12 - 14° C.
Manufacturing technique: White wine-making technique; must chilling and static racking. Alcoholic fermentation in small, 225-liter oak barrels. The wine is stored in fermentation tanks for 5 months with continuous repassing of must over the grape dregs. The wine is then bottled; refinement in bottles lasts at least 10 months in the cellar before consumption. The product reaches the consumer 16 months after harvesting and has long-lasting features.
Organoleptic features: Colour: straw-yellow with golden shadings, which are even stronger when the wine ages.
Fragrance: strong flower aroma with honey and ripe fruit hints; surprisingly persistent.
Taste: full, warm taste with vanilla hints; harmonious and well balanced; its freshness gives an idea of the interesting features resulting from ageing.
