Production area: Company-owned vineyards located in the southern area of the Municipality of Colonnella.
Soil: Clayey, medium texture, poor. Average altitude of vineyards: 250 metres above sea level.
Employed grapes: 100% Passerina
Consume with: Drink it as an aperitif or consume with steam-cooked fish dishes to enhance the taste of the dish. If aged for a long time, more daring combinations can be attempted. Just try them.
Alcohol level 11.5% Vol.
Best served at 10-12°C
Manufacturing technique: White wine-making technique; must chilling and static racking. Alcoholic fermentation between 17° and 20° C. After some decanting, the wine is stored in constant-temperature steel tanks with nitrogen charging until whine is bottled, usually before the beginning of the summer.
Organoleptic features: Colour: straw-yellow with green shadings
Fragrance: strong fruity flavour and surprisingly persistent
Taste: dry with an acid hint when young, which gives the wine excellent, long-lasting features; soft body, fruity and persistent.
